what are whitebait?
In NZ, whitebait are the juvenile of five different species. The most common species are known as inanga, which also happens to be Te Reo for whitebait AND a type of greenstone.
HOW DO YOU CATCH WHITEBAIT?
Whitebait are caught with a net, though there are different styles and sizes of nets to suit different fishing conditions.
WHEN IS THE WHITEBAIT SEASON?
There are three different seasons in NZ - one for the West Coast, one for the Chathams, and one for the rest of NZ. Not each region gets the same amount of time to fish which is considered to help with sustainability.
How much does whitebait cost?
Whitebait are the most expensive fish in NZ. The price varies across the country, especially depending on the season.  West Coast whitebait is highly sought after with the current market price per kg at around $120-140.
how do you cook whitebait?
Everyone has their own recipe when it comes to making a whitebait patty. We think that whitebait patties are best with eggs to bind the mix and PLENTY of whitebait. Adding anything else (like flour) can detract from the taste and authenticity.

Our whitebait patties are served on a slice of bread because we think this maximizes whitebait's unique & delicate flavour & reminds us of the ones we had as kids....
